Fat is not a "bad" Word

We smirk when we hear "fat". We started blaming the fat thinking it is the culprit. We were taught Ghee is not good based on its calories. However fat is not a bad thing. e.g.


1. Ghee known as "clarified butter" has been recommended by ADA because of its Short chain fatty acids. Adding this to food helps lower the GI of food , improves digestion (pushes of constipation) and also works as a pre-biotic agent. It is also known to aid absorption of all fat soluble Vitamins.

2. Filtered oils are good as they are made at a lower temperature preventing toxicity in fatty acids bond. The flavor is also retained. So prefer mustard, sesame, groundnut or coconut oil depending on the geography where you stay. Avoid refined oils as they are processed at higher temperatures.
